It’s an answer I struggle with because my job is ever-changing and something that I love this week will probably be my worst nightmare next week (story of my life…), but I think I’ve finally nailed down my answer.

I absolutely LOVE that every single day I’m challenged to try something new.

I can’t believe I just said that.

A few years ago, the thought of change and anything new scared the bajeeeezus out of me. PROOF. But I’ve made it my life mission to tackle that fear and somewhere along the way it became something I enjoyed.

I’ve come to learn that anything that scares you is exactly what you should be doing.

But all of this takes work, practice and patience. The latter of which is not my strong suit.

Take this Almond Butter Hemp Seed Cookies post. At one point in my life I would not have thought that writing a blog post – let alone a blog- was something I was capable of. Food photography gave me anxiety and social media overwhelmed me. Now these things are so basic for me and I’ve streamlined the process to a point where I could probably do it all with my eyes closed…upside down. Except when I come back from vacation.

Sometimes I decide I’m going to tackle GIFs or collages or business-related tasks like pitches and designing proposals. Occasionally I really step out there and take on crazy projects like creating and publishing an ecookbook in 7 weeks. NBD.

I even filmed a video for this post. But it sucks so you don’t get to see it.

But here’s the thing, even though it sucks I know that the next one will be better. I’ll eventually figure out lighting and Adobe Premiere and really creating a piece of work that is both of value to you and an accomplishment for me.

So I’m going to keep at it and one day you’ll get to see the product of this hard work.

Until then, I’m going to keep trying something that scares me every.single.day. I encourage you to do the same because damnnnnn it feels good.

Almond Butter Hemp Seed Cookies

  • Cook Time: 12 minutes

  • Yield: 12 cookies 1x

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine almond butter, coconut palm sugar and egg.
  3. Stir in hemp seeds.
  4. Add in vanilla, chocolate chips and sea salt if using.
  5. Dough should come together as a sticky ball but will hold together.
  6. Roll into 12 small balls and place on a parchment or silicone-lined baking sheet.
  7. Score each cookie with a fork to flatten. Sprinkle with additional hemp seeds.
  8. Bake for 12 minutes.
  9. Remove from oven and let cool on tray for 10 minutes. DO NOT TOUCH as they will fall apart.
  10. After 10 minutes, remove and let cool completely on a wire rack.
  11. Store in an airtight container for several days on countertop.

    I don’t have coconut palm sugar, nor can I probably find it easily in my small town. Can I sub stevia or another artificial sweetener instead?

    Gahh you’re amazing. Towards the end of this semester, I’ve been falling into the habit of only doing things that are comfortable and familiar, but I hope to break out of that and reacquaint with the thrill of trying new things. New experiences can be uncomfortable, but I know that they have never failed to help me grow and learn. Thanks for the reminder, Davs ♥

    Almond butter hemp seed cookies – hello!
    I couldn’t agree more with what you have written in this post Davida. Someone said to me the other week that if we are not stepping out of our comfort zones at least once a week then we are not living hard enough. Keep being amazing lady – you are an inspiration to so many!
