Spicy Ramen Noodles

- 8 ounces ramen noodles
- 1/4 cup soy sauce
- 2 tbsp sweet chili sauce
- 1 tbsp rice wine vinegar
- 1 tbsp maple syrup or brown sugar
- 1 tbsp sriracha sauce (add more or less based on spice level)
- 2 tbsp sesame oil
- 4 green onions, chopped (separate white from green parts)
- 1 red bell pepper, seeded + thinly sliced
- 2 garlic cloves, minced
- 1 inch knob fresh ginger, grated
- In a large pot on the stove top cook ramen noodles according to package instructions. Drain noodles and run under cold water and set aside while making the rest of the recipe.
- In a medium bowl stir together soy sauce, sweet chili sauce, rice wine vinegar, maple syrup (or brown sugar) and sriracha sauce. Set aside.
- Heat sesame oil in a large pan or wok over medium-high heat. Add white parts of green onion and cook for 1-2 minutes or until browned.
- Add bell pepper and cook for 3 minutes or until lightly browned.
- Add in garlic cloves and ginger and cook for 1 more minute.
- Stir in ramen noodles and top with chili sauce mixture. Let noodles simmer in mixture for a few minutes to allow flavors to meld.
- Top with green parts of green onions for garnish and serve.
